Descripción: A distinctive feature of Hydrangeas is that it consists not of petals, but of sepals. Interestingly, the blue color of the sepals chosen for my illustration is characteristic of the species Hydrangea macrophylla, due to a number of organic components (3-O-glucosyldelphinidin, 5-O-caffeoylquinic, 5-O-p-coumaroylquinic and 3-O-caffeoylquinic acids) and can vary depending on the soil pH. The spectrum of these color changes can be described as follows: acidic soil pH – blue sepals (A), neutral pH – pale beige (B), alkaline pH – pink/lilac (C). The ability of Hydrangeas to accumulate aluminum ions, which interact with anthocyanins, from acidic soils determines the blue color of sepals; in soils with an alkaline pH, this ability is lost due to the inability to dissolve Al3+ in water.
